I'm in love with this salad and I don't feel guilty at all eating it. The first time I had it was when we went to visit Prather's in Kansas.
It's the perfect blend of sweet, savory and crunchy.
First you'll need your spring mix. I'll have these from the garden this summer!
You can use feta cheese or blue cheese. Either one will do, you just want it to have a strong flavor.
Balsamic Vinaigrette
Craisins!
I added real bacon bits, they're not in the original recipe, but I love bacon bits so I couldn't resist!
Cucumber, chopped.
Cherry tomatoes, sliced in half.
Green onions...
Chopped. You will also need chopped walnuts and sprouts.
Fill a large mixing bowl about 3/4 a way up, leaving room to toss, with your spring mix.
Then pour your ingredients on top, eyeballing it on each ingredient.
Then toss and pour your vinaigrette over the top and toss some more. Enjoy!!!
