Cheesy Roasted Red Potatoes & Veggies

This dish is sooo easy! Chop up 2 red potatoes, leave the skin on, into small bite size pieces. Chop half an onion into medium size slices. Roughly chop about 2 tablespoons of fresh parsley. Remove leaves from 2 sprigs of thyme. Cut a jalapeno in half, length wise, remove most of the seeds but leave some, and slice each of the jalapeno halves. Mix all together in an oven safe dish, liberally salt and pepper the potatoes and veggies and drizzle a couple of tablespoons of extra virgin olive oil. Mix some more and pop in a 375 degree oven for about 30 minutes, or until the edges of the potatoes are browned. Remove from the oven.

This is what they should look like.

Drizzle 1/2 cup of heavy cream over the top. Put them back in the oven for 15 minutes or so.

mmmm. Then sprinkle goat cheese, or any other white cheese you have on top and broil until golden brown.

2 red potatoes
1 jalapeno
1/2 onion
2 sprigs of thyme
Kosher salt
Fresh cracked black pepper
2 tablespoons extra virgin olive oil
2 tablespoons fresh parsley
1/2 cup heavy cream
1 cup goat cheese
