Cheesy Tomato & Artichoke Snacks

Take some sourdough bread and cut them into bite-sized squares. I got this loaf on the sale rack which is a great idea because almost stale bread is great for this recipe, and it's cheaper!

Put them on a baking sheet and pop them in a 400 degree oven for 5 or 10 minutes, crisping them up a bit.

Slice up a roma tomato. Finely chop up a few artichoke hearts.

When the bread pieces are slightly crispy, pull them out of the oven and spread a little mayonnaise on them then sprinkle some salt and fresh cracked black pepper.

Sprinkle some fresh grated Parmesan cheese. I sprinkled fresh chopped parsley on the ones I was putting tomato slices on. Broil them until the cheese is bubbly.

Then put your artichokes on some of the pieces and the tomato slices on the ones with parsley. Broil them again for about 2 minutes.

So easy and so delicious. This was one snack I mad for the Super Bowl.

Ingredients:

1 loaf of sourdough bread
1 or 2 roma tomatoes
4 artichoke hearts
1 cup fresh grated Parmesan cheese
3 tablespoons chopped parsley
Mayonnaise
Salt
Fresh cracked black pepper
