What The Heck Is Risotto???

I have posted a few risotto recipes and many people probably don't know what it is. I didn't know what it was until about a year and a half ago. It's a dish that is served at a lot of fancy dancy restaurants. Once you get the hang of it, it's easy and the possibilities are endless!

Risotto is arborio rice, sauteed in butter until the rice is golden. Then slowly cooked by adding broth a ladle full at a time until tender. It takes about 30-45 minutes to cook. But this slow cooking process makes the rice really rich and creamy.

When the rice is finished cooking and tender you add fresh grated cheese. Pretty much any kind of cheese you want. There are all kinds of risotto recipes, which makes it really fun to cook. Add plenty of cheese and whatever other ingredients you like.

Some of my favorites are mushroom risotto, sun-dried tomato risotto, and I'm really thinking of trying a spinach and artichoke risotto...
