So I had my first breakfast sandwich at Panera Bread the other day and it was amazing. I think the secret is the bread and the cheese!
Fry up some applewood smoked bacon. Don't fry it until it's so crispy that it breaks apart when you pick it up! Liberally blot the grease off with a paper towel. This isn't a greasy sandwich, not that I am against them, this is just not one of them.
Next, slice some Vermont sharp white cheddar cheese. The cheese sounds fancy dancy but itps not, I got it at Wal-Mart. The brand is Cabot. This cheese has a nice tang that adds to the sandwich.
Next you'll need enough ciabatta bread for however many sandwiches you intend on making. I couldn't find any loaves, so I had to get the pre-made sandwich rolls. I would prefer a fresh roll. If you got a fresh roll, you would want to slice it hot dog style (length wise).
Next, beat up some eggs. Again however many sandwiches you intend on making. You'll want about 1 to 1 1/2 eggs per sandwich. On my other breakfast sandwiches I normally cook an over medium egg, but this sandwich is different!
Turn your oven to 350 degrees and brush the top of the ciabatta rolls with your egg mixture. Cook until the outside of the roll has a crispy texture.
Pour the eggs in a medium low temperature skillet that has been greased. You are NOT going to scramble them. Instead when the bottom of the eggs start to set up you are going to cut them into four pie shaped pieces. When the eggs is done enough to flip to the other side, do so. Cool on the other side until just done, you don't want it to be so done it tastes fried. I do this because I like the texture better on sandwiches and I can't stand scrambled egg on breakfast sandwiches. They fall out everywhere!
Finally, assemble the sandwich. One piece of egg, then cover it with the sliced Vermont sharp white cheddar cheese, then another piece of egg, then cover with the applewood smoked bacon. Enjoy the crispiness of the ciabatta, sweet yet smokey flavor of the bacon and tangy sharp taste of the cheese!

1 loaf or several rolls of ciabatta bread
eggs
bacon
Vermont white cheddar cheese

ReplyDeleteUM. YUMM. This is my ABSOLUTE favorite Panera sandwich! I used to eat them a lot when I worked at Cimarron because (luckily) the cordless phone reached all the way out the door, across the parking lot and INTO Panera. Haha!
