Football Quesadillas


I made these to watch the Pro Bowl last Sunday that the AFC won! They were so delicious! I didn't do any play-by-play steps because you can do pretty much whatever you want with quesadillas, use your imagination!

These Football Quesadillas included grilled chicken, green onions (whites and greens), panchetta, sun-dried tomatoes, garlic and monterey jack cheese. They were to die for!

Heat a tablespoon of extra virgin olive oil in a skillet, chop up some panchetta (or bacon) and cook it until crispy. About half way through the panchetta cooking add all the green onions to soften them up a bit. Remove the panchetta and onions with a slotted spoon. Add the garlic, chicken and sun-dried tomatoes to the skillet. Cook until the chicken is done, but NOT overcooked. A couple of minutes on each side. You can tell chicken is done when it shreds. Don't be scared of juice, as long as it shreds in the middle it's done. Chicken can be juicy, you just have to know how to cook it! Remove the chicken from the skillet and chop it into small bite-size pieces.

Cover a cookie sheet with parchment paper (this makes clean-up a breeze), warm two tortillas up in the microwave for 20 seconds or so, to soften them. Place the tortillas on the cookie sheet. On half of each tortilla sprinkle your cheese, then the chicken, then top with all your other goodies, then sprinkle with more cheese on top. Fold the other side of the tortilla over, press down to make sure the fold stays. Pop them into a 400 degree oven for about 15 minutes or until the tortilla starts browning around the edges. Slice with a pizza cutter and enjoy.

*Remember, use what you have! You probably won't have the exact ingredients that I did in the kitchen, make up your own football quesadillas!
