Guacamole Buttermilk Dressing

These are the fabulous players in this yummy dressing.

First, you need one ripe avocado. Take your knife and cut it in half, going around the seed. Then twist both sides and pull it apart like in the picture above, then remove the seed.

Scoop out the inside of the avocado with a spoon, going along the edges of the peel. Put the inside of the avocado in a blender.

Next pour 2/3 cup of buttermilk into the blender.

Then a 1/4 cup of sour cream into the blender.

Chop up about 1/4 of a large yellow onion, or a 1/3 of a small yellow onion. Add to the blender.

Next chop up one large clove of garlic, or two small cloves. Add to the blender. Throw about a teaspoon or so of kosher salt and fresh cracked black pepper. Pulse the blender until the avocado is all blended up.

Next comes the heat! It's not a spicy dressing at all, this just gives it some good flavor. Pull about 3 chipolte peppers from your can of chipolte in adobo sauce. You might want to slice them in half length wise and scrape out some of the seeds. Then make sure and remove stems if there are any. Then chop them up and add them to your blender. Pulse a few more times until it is well blended. Taste it, if it needs more heat, add another pepper or two. Adjust the seasonings to your taste.

Now pour this yummy dressing over some fresh lettuce and enjoy!

Ingredients:
1 ripe avocado
2/3 cup buttermilk
1/4 cup sour cream
1 teaspoon kosher salt
1 teaspoon fresh cracked black pepper
1/4 of a large yellow onion chopped (or a 1/3 if you have a smaller onion)
1 large clove of garlic chopped (or two small cloves)
3 chipolte peppers (from a can of chipolte in adobo sauce, found near the salsa and other Mexican food)
